I love this recipe mainly because it's a healthier version of Hamburger Helper and they renamed it "Buddy." I'll let you know when I find Tuna Fish Pal and Green Bean Casserole Amigo.
My entire family really likes HB Buddy, by the way! I found this in Eating Well, but changed it around quite a bit.
2-3 celery stalks (chopped)
1 medium sweet onion (coarsely chopped)
2-3 carrots (peeled and chopped)
3/4 cup kale (leaves torn from stalk)
2-3 cloves of garlic
1 pound of lean ground beef (grass fed!)
2 cups organic chicken/ beef broth
2 cups of elbow macaroni (I use GF quinoa pasta - it's great!)
thyme - 1-2 tbls depending on how you like it.
garlic salt -to taste
black pepper - to taste
Start sauteing celery in olive oil in a large saute pan. In a Cuisinart (or other chopping device), ground onion, carrots, kale and garlic together. Add to celery and mix in pan. As celery starts to soften, add the ground beef and mix. This is where I add the thyme, garlic salt and pepper. Make sure the meat is starting to cook through. Add in the broth and bring it to a good simmer (if it cooks down too much, add water). Add uncooked pasta, cover and let cook until pasta is tender. Add enough sour cream to mix throughout (about 1/3 cup).
And there you have it! Good meal and no powdered ingredients. Let me know if you try this.
