Happy Sweets

I'm definitely realizing that refined sugar does my fibro no good. I had good ol' ice cream the other night and woke up with ham hock hands. Sigh.
I'm always so happy to find healthier sweets that satiates everyone's tooth, and I can wake up a little less puffballed.

Although it's just about spring, these little "Snowballs" (from Josh Axe's "Real Food") are a nice fix. Let me know what you think.

Snowballs

1 cup almond butter
1/2 cup carob powder (I used organic cocoa powder)
2 tbsp raw honey
2 tsp cinnamon
1 tsp nutmeg
Pinch of sea salt
1/2 cup shredded coconut

Mix all but coconut together. Roll into balls (tbsp size) and coat in coconut. I found these do nicely in the freezer, but can also just be popped in the fridge.

    1. Hiya! It would taste fine without the coconut, but will be a bit sticky. I'd suggest rolling them in crushed peanuts or almonds maybe.
